Cass Vineyards & Winery
Located in the rolling, oak-studded hills between Paso Robles and Creston on California's beautiful Central Coast, Cass Winery is a small producer of premium quality wines made from estate grapes that trace their origin to the Bordeaux and Rhône regions of France. The climate is ideal for these varietals since the distance from the coast generates sufficient daytime heat while still bringing the cooling evening breezes required for optimal ripening.
Within California, winemaking at Cass is distinct in that all of their Rhône grapes are certified by ENTAV (Establissement National Technique pour l’Amelioration de la Viticulture), the French agency responsible for the quality of wine grape varieties. Over 90% of all French vineyards are started with ENTAV certified plants, but these were only recently made available in California.
The estate vineyards surround the winery facility and tasting room, which includes an on-premise restaurant offering cuisine designed to complement the wines. For visitors, this provides an ultimate sensory experience in that they can literally see, touch, taste and smell the grapes in the vineyards while enjoying the wines, paired with foods, in the midst of a stunning, inspiring setting.
